- 1/2 cup almond butter
- 1/2 cup chopped walnuts
- 1/4 cup honey or maple syrup (optional for added sweetness)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it or lining it with parchment paper.
- In a large bowl, mix together the grated carrots, applesauce, almond butter, walnuts, and honey or maple syrup if using.
- Add the eggs and vanilla extract, stirring until the mixture is smooth and well combined.
- In another bowl, combine the baking soda, cinnamon, nutmeg, and salt.
- Slowly incorporate the dry ingredients into the wet mixture, stirring gently until just blended.
- If desired, fold in the raisins for an extra burst of flavor.
- Transfer the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let the cake cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.

- For a spicier kick, add 1/2 teaspoon of ground ginger.
