  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan by greasing it or lining it with parchment paper.
  2. In a large bowl, mix together the grated carrots, applesauce, almond butter, walnuts, and honey or maple syrup if using.
  3. Add the eggs and vanilla extract, stirring until the mixture is smooth and well combined.
  4. In another bowl, combine the baking soda, cinnamon, nutmeg, and salt.
  5. Slowly incorporate the dry ingredients into the wet mixture, stirring gently until just blended.
  6. If desired, fold in the raisins for an extra burst of flavor.
  7. Transfer the batter into the prepared cake pan, smoothing the top with a spatula.
