A simple and delicious recipe for No-Knead Turkish Bread that requires minimal effort and yields a rustic flatbread perfect for any meal.


Ingredients

  • 3 cups all-purpose flour
  • 1 ½ teaspoons sea salt
  • 1 teaspoon instant yeast
  • 1 ¼ cups warm water (around 110°F)
  • 2 tablespoons extra virgin olive oil (plus more for greasing)
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon black cumin seeds (optional)

Instructions

  1. In a spacious bowl, whisk together the flour, sea salt, and instant yeast until well combined.
  2. Gradually add the warm water and olive oil, mixing with a wooden spoon until a sticky and shaggy dough forms.
  3. Cover the bowl with a damp cloth and let it sit at room temperature for 12 to 18 hours, allowing it to rise until it becomes bubbly and has roughly doubled in size.
  4. Once the dough has risen, preheat your oven to 450°F.
  5. Place a cast-iron skillet or a Dutch oven (with the lid) inside the oven to heat for about 30 minutes.
  6. On a floured surface, gently turn out the dough, using floured hands to shape it into a loose ball without overworking it.
  7. Carefully take the hot skillet or Dutch oven out of the oven and lightly grease the bottom with olive oil.
  8. Transfer the dough into the vessel, and if you like, sprinkle sesame seeds and black cumin seeds on top for added flavor.
  9. Cover with the lid and bake for 30 minutes.
  10. After 30 minutes, remove the lid and continue baking for another 15-20 minutes, until the bread turns a beautiful golden brown and sounds hollow when tapped on the bottom.
  11. Once done, take the bread out and let it cool on a wire rack for at least 30 minutes before slicing.

Notes

  • For a richer flavor, brush the top with melted butter right after baking.
  • You can also incorporate fresh herbs like rosemary or thyme into the dough before the initial rise for an aromatic twist.
