- 1 cup beef broth
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional, for heat)
- 2 tablespoons olive oil
- Fresh cilantro, for garnish (optional)
- Sour cream, for serving (optional)
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Increase the heat to medium-high and add the ground beef to the pot. Cook until browned, breaking it apart with a spoon, about 6-8 minutes. Drain any excess fat if necessary.
- Stir in the diced tomatoes, tomato paste, and beef broth. Mix well to combine.
- Add the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper (if using). Stir until all spices are evenly distributed.
- Bring the chili to a simmer, then reduce the heat to low. Cover and let it simmer for 30 minutes, stirring occasionally.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro and a dollop of sour cream if desired.
