- 2 cups unsalted roasted peanuts
- 1 cup almond butter
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 cup mini marshmallows
- 1/2 cup dried cranberries
- 1/2 cup dark chocolate chips
Instructions
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a large mixing bowl, combine the almond butter, honey, vanilla extract, cinnamon, nutmeg, ginger, and salt. Stir until well mixed and smooth.
- Add the roasted peanuts, mini marshmallows, and dried cranberries to the mixture. Stir until all ingredients are evenly coated.
- Transfer the mixture to the prepared baking dish. Press it down firmly and evenly using a spatula or your hands.
- Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Pour the melted chocolate over the nougat mixture and spread it evenly.
- Refrigerate the bars for at least 2 hours or until set. Once firm, lift the bars out of the dish using the parchment paper and cut them into squares or rectangles.
- Serve immediately or store in an airtight container in the refrigerator for up to one week.
Notes
- For a festive touch, sprinkle some crushed peppermint candies on top of the chocolate before it sets.
- Substitute the dried cranberries with chopped dried apricots or cherries for a different flavor profile.
