A delightful no-bake dessert featuring a creamy vanilla and cranberry filling on a graham cracker crust.

- 1 cup heavy whipping cream
- 1 cup vanilla yogurt
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cranberries (thawed if frozen)
- 1/2 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1/4 teaspoon salt
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium bowl, combine the graham cracker crumbs, melted butter, and salt. Mix until the crumbs are evenly coated. Press the mixture into the bottom of an 8×8-inch square baking dish to form a crust. Set aside.
- In a large mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- Gently fold the vanilla yogurt into the whipped cream until fully combined.
- Fold in the cranberries, being careful not to break them apart too much.
- Pour the creamy mixture over the prepared crust in the baking dish, spreading it evenly.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours or until set.
- Once set, cut into squares and serve chilled. Garnish with fresh mint leaves if desired.
Notes
- For a different flavor, substitute the cranberries with chopped strawberries or blueberries.
- Add a layer of chocolate ganache on top before chilling for an indulgent twist.
