  • 1/4 cup agave syrup or maple syrup

  • 1/4 teaspoon pink Himalayan salt
  • 1/4 cup mini dark chocolate chips (optional)
  • 1/4 cup flaxseeds or pumpkin seeds (optional)

Instructions

  1. Start by placing the pitted medjool dates and pecans into a high-speed blender or food processor. Blend until the mixture is finely chopped and crumbly.
  2. Next, introduce the quick oats, cacao powder, peanut butter, agave syrup or maple syrup, almond extract, and pink Himalayan salt into the blender. Process until everything is thoroughly mixed and forms a sticky dough.
  3. If desired, gently mix in the mini dark chocolate chips and flaxseeds or pumpkin seeds until they are well incorporated.
  4. Prepare a baking sheet by lining it with parchment paper. Scoop out tablespoon-sized portions of the mixture and roll them into balls, placing them on the prepared sheet.
  5. Chill the energy bites in the refrigerator for about 30 minutes to firm them up.
  6. Once chilled, transfer the bites to an airtight container for storage or enjoy them right away.
