- 1 cup raw pecans
- 1/2 cup quick oats
- 1/4 cup unsweetened cacao powder
- 1/4 cup peanut butter
- 1/4 cup agave syrup or maple syrup
- 1 teaspoon almond extract
- 1/4 teaspoon pink Himalayan salt
- 1/4 cup mini dark chocolate chips (optional)
- 1/4 cup flaxseeds or pumpkin seeds (optional)
Instructions
- Start by placing the pitted medjool dates and pecans into a high-speed blender or food processor. Blend until the mixture is finely chopped and crumbly.
- Next, introduce the quick oats, cacao powder, peanut butter, agave syrup or maple syrup, almond extract, and pink Himalayan salt into the blender. Process until everything is thoroughly mixed and forms a sticky dough.
- If desired, gently mix in the mini dark chocolate chips and flaxseeds or pumpkin seeds until they are well incorporated.
- Prepare a baking sheet by lining it with parchment paper. Scoop out tablespoon-sized portions of the mixture and roll them into balls, placing them on the prepared sheet.
- Chill the energy bites in the refrigerator for about 30 minutes to firm them up.
- Once chilled, transfer the bites to an airtight container for storage or enjoy them right away.
