Description

Delicious and easy-to-make No-Bake Oatmilk Caramel Ribbon Bars that are perfect for a sweet treat without the need for baking.


Ingredients

  • 1 cup rolled oats
  • 1 cup almond flour
  • 1/2 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1 cup oatmilk
  • 1/2 cup brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon sea salt
  • 1 teaspoon cornstarch mixed with 1 tablespoon water

Instructions

  1. In a mixing bowl, combine rolled oats, almond flour, melted coconut oil, maple syrup, salt, and vanilla extract. Stir until well combined.
  2. Press the mixture firmly into the bottom of a lined 8×8-inch baking dish to form the base.
  3. In a saucepan over medium heat, combine oatmilk, brown sugar, cocoa powder, and sea salt. Stir until the mixture is smooth and begins to simmer.
  4. Add the cornstarch mixture and continue to cook for another 2-3 minutes, stirring constantly until the mixture thickens.
  5. Remove from heat and let cool for a few minutes.
  6. Pour the caramel mixture over the oat base in the baking dish, spreading it evenly.
  7. Refrigerate for at least 2 hours or until set.
  8. Once set, cut into bars and serve chilled. Store any leftovers in an airtight container in the refrigerator.

Notes

  • For a nut-free version, substitute almond flour with sunflower seed flour.
  • To add a crunch, mix in 1/4 cup of chopped nuts or seeds into the base before pressing it into the dish.
