- 1 ½ cups rolled oats
- 1 cup almond flour
- ½ cup maple syrup
- ½ cup creamy almond butter
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup chopped walnuts (optional)
- ½ cup dark chocolate chips (optional)
Instructions
- In a large mixing bowl, combine rolled oats, almond flour, maple syrup, almond butter, vanilla extract, ground cinnamon, and salt. Mix until all ingredients are well combined and form a sticky dough.
- If using, fold in chopped walnuts and dark chocolate chips.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- Press the mixture evenly into the bottom of the prepared dish, using a spatula or your hands to pack it down firmly.
- Refrigerate the mixture for at least 2 hours or until firm.
- Once set, lift the mixture out of the dish using the parchment paper and cut into squares or bars.
- Serve chilled or at room temperature. Store leftovers in an airtight container in the refrigerator for up to one week.
Notes
- For a nut-free version, substitute almond butter with sunflower seed butter.
- To add a touch of sweetness, sprinkle a little extra cinnamon sugar on top before serving.
