Instructions
- In a medium saucepan, combine the heavy cream and almond milk over medium heat. Stir occasionally until the mixture is warm but not boiling.
- In a separate bowl, whisk together the egg yolks, powdered erythritol, lemon juice, lemon zest, and vanilla extract until smooth.
- Slowly pour the warm cream mixture into the egg yolk mixture while whisking constantly to temper the eggs.
- Return the combined mixture to the saucepan and cook over low heat, stirring continuously until it thickens slightly (about 5-7 minutes). If using gelatin, sprinkle it over the mixture and stir until dissolved.
- Remove from heat and let it cool for about 10 minutes. Then, pour the custard into individual serving dishes or a large bowl.
- Cover with plastic wrap and refrigerate for at least 2 hours or until set.
- Serve chilled, garnished with additional lemon zest or a dollop of whipped cream if desired.
