Instructions

  1. In a medium bowl, combine the crushed gingerbread cookies and 2 tablespoons of melted butter. Mix until the crumbs are evenly coated. Divide the mixture among 4 serving cups, pressing it down to form a crust layer at the bottom of each cup.
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar, vanilla extract, ground cinnamon, ground ginger, and ground nutmeg, mixing until well combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  4. Add the molasses to the cream cheese mixture and fold gently until combined.
  5. Spoon the cheesecake mixture over the gingerbread crust in each cup, smoothing the tops with a spatula.
  6. Refrigerate the cups for at least 2 hours to allow them to set.
