Delicious and healthy no-bake chocolate bars made with dates and nuts, perfect for a quick snack or dessert.

- 2 cups pitted Medjool dates (about 12–15 dates)
- 1 cup raw almonds
- 1 cup walnuts
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1/4 cup almond butter
- 1/4 cup dark chocolate chips (optional, for topping)
Instructions
- In a food processor, combine the pitted dates, raw almonds, walnuts, cocoa powder, sea salt, and vanilla extract. Pulse until the mixture is finely chopped and starts to clump together.
- Add the almond butter to the mixture and pulse again until well combined. The mixture should be sticky and hold together when pressed.
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal. Transfer the mixture to the dish and press it down firmly and evenly using your hands or a spatula.
- If desired, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the pressed mixture.
- Refrigerate the bars for at least 1 hour to set. Once firm, lift the bars out of the dish using the parchment paper and cut them into squares or rectangles.
- Store the bars in an airtight container in the refrigerator for up to 2 weeks.
Notes
- For added flavor, consider mixing in a teaspoon of cinnamon or a pinch of cayenne pepper for a spicy kick.
- Substitute the almonds and walnuts with your favorite nuts or seeds, such as pecans or sunflower seeds, for a different taste and texture.
