Description

Delicious and healthy no-bake chocolate bars made with dates and nuts, perfect for a quick snack or dessert.


Ingredients

  • 2 cups pitted Medjool dates (about 1215 dates)
  • 1 cup raw almonds
  • 1 cup walnuts
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1/4 cup almond butter
  • 1/4 cup dark chocolate chips (optional, for topping)

Instructions

  1. In a food processor, combine the pitted dates, raw almonds, walnuts, cocoa powder, sea salt, and vanilla extract. Pulse until the mixture is finely chopped and starts to clump together.
  2. Add the almond butter to the mixture and pulse again until well combined. The mixture should be sticky and hold together when pressed.
  3. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal. Transfer the mixture to the dish and press it down firmly and evenly using your hands or a spatula.
  4. If desired, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the pressed mixture.
  5. Refrigerate the bars for at least 1 hour to set. Once firm, lift the bars out of the dish using the parchment paper and cut them into squares or rectangles.
  6. Store the bars in an airtight container in the refrigerator for up to 2 weeks.

Notes

  • For added flavor, consider mixing in a teaspoon of cinnamon or a pinch of cayenne pepper for a spicy kick.
  • Substitute the almonds and walnuts with your favorite nuts or seeds, such as pecans or sunflower seeds, for a different taste and texture.
