Delicious and easy-to-make No-Bake Caramel Pistachio Glimmer Bars that are perfect for a sweet treat.

- 1 cup pitted dates, packed
- 1 cup raw pistachios, shelled
- 1 cup rolled oats
- 1/4 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
- 1 tablespoon coconut oil
Instructions
- Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a food processor, combine the pitted dates, pistachios, rolled oats, almond butter, honey or maple syrup, vanilla extract, and salt. Process until the mixture is well combined and sticky.
- Press the mixture evenly into the prepared baking dish, using your hands or a spatula to pack it down firmly.
- In a small microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Pour the melted chocolate over the pressed mixture in the baking dish, spreading it evenly with a spatula.
- Refrigerate the bars for at least 2 hours, or until firm.
- Once set, lift the bars out of the dish using the parchment overhang and cut into squares or rectangles.
Notes
- For a nut-free version, substitute almond butter with sunflower seed butter and use sunflower seeds instead of pistachios.
- Add a pinch of sea salt on top of the chocolate layer for a sweet and salty flavor contrast.
