Instructions
- In a saucepan, combine water and agar-agar powder, and bring to a boil while stirring.
- Add sugar and mix until dissolved.
- Remove from heat and let it cool slightly.
- Pour the mixture into a mold and refrigerate until set.
- In another saucepan, combine yuzu juice, water, and sugar for the gelée, and bring to a boil.
- Pour the yuzu mixture into a mold and refrigerate until set.
- Once both the raindrop cake and yuzu gelée are set, carefully unmold them.
- Serve the raindrop cake topped with yuzu gelée.
Notes
- Ensure the agar-agar is fully dissolved to achieve the right texture.
- Yuzu can be substituted with lemon or lime juice if unavailable.
