- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups rolled oats
- 1/2 cup chopped almonds
- 1/2 cup mini chocolate chips
- 1/2 cup dark chocolate chips (for melting)
- 1 tablespoon coconut oil
Instructions
- In a medium bowl, mix together almond butter, honey, vanilla extract, and salt until smooth.
- Stir in rolled oats and chopped almonds until well combined.
- Fold in mini chocolate chips.
- Line a muffin tin with cupcake liners.
- Divide the mixture evenly among the liners, pressing down firmly to create a compact layer.
- In a microwave-safe bowl, combine dark chocolate chips and coconut oil.
- Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Spoon the melted chocolate over each cup, spreading it evenly.
- Refrigerate for at least 1 hour or until set.
- Once set, remove the cups from the muffin tin and peel away the liners.
- Serve chilled or at room temperature.
Notes
- For a crunchier texture, substitute half of the rolled oats with crispy rice cereal.
- To add a touch of flavor, sprinkle sea salt on top of the melted chocolate before it sets.
