A delicious and vibrant dish featuring bell peppers stuffed with flavorful Nigerian Jollof rice.


Ingredients

  • 4 large bell peppers
  • 2 cups cooked Nigerian Jollof rice
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon curry powder
  • Salt and pepper to taste
  • 1/4 cup vegetable oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a pan, heat vegetable oil and sauté onions and garlic until translucent.
  4. Add diced tomatoes, thyme, curry powder, salt, and pepper; cook for 5 minutes.
  5. Stir in the cooked Jollof rice and mix well.
  6. Stuff the bell peppers with the Jollof rice mixture.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 25-30 minutes until the peppers are tender.
  9. Garnish with fresh parsley before serving.

Notes

  • Feel free to add protein such as chicken or shrimp to the rice mixture.
  • Adjust the spice level according to your preference.
  • Leftover Jollof rice can be used for stuffing.
