- 4 large bell peppers
- 2 cups cooked Nigerian Jollof rice
- 1 cup diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon curry powder
- Salt and pepper to taste
- 1/4 cup vegetable oil
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a pan, heat vegetable oil and sauté onions and garlic until translucent.
- Add diced tomatoes, thyme, curry powder, salt, and pepper; cook for 5 minutes.
- Stir in the cooked Jollof rice and mix well.
- Stuff the bell peppers with the Jollof rice mixture.
- Place the stuffed peppers in a baking dish and cover with foil.
- Bake for 25-30 minutes until the peppers are tender.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add protein such as chicken or shrimp to the rice mixture.
- Adjust the spice level according to your preference.
- Leftover Jollof rice can be used for stuffing.
