Description

A fresh and tasty Niçoise rice salad recipe that combines jasmine rice with vegetables, tuna, and a flavorful dressing.


Ingredients

  • 2 cups cooked jasmine rice, cooled
  • 1 cup cherry tomatoes, halved
  • 1 cup canned green beans, drained and rinsed
  • 1/2 cup black olives, pitted and sliced
  • 1/2 cup canned tuna, drained and flaked
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 hard-boiled eggs, quartered
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooled jasmine rice, cherry tomatoes, green beans, black olives, tuna, red onion, and parsley. Gently toss to mix the ingredients evenly.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
  3. Pour the dressing over the rice mixture and toss gently to coat all the ingredients.
  4. Arrange the quartered hard-boiled eggs on top of the salad for garnish.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
