- 2 cups cooked jasmine rice, cooled
- 1 cup cherry tomatoes, halved
- 1 cup canned green beans, drained and rinsed
- 1/2 cup black olives, pitted and sliced
- 1/2 cup canned tuna, drained and flaked
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 hard-boiled eggs, quartered
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooled jasmine rice, cherry tomatoes, green beans, black olives, tuna, red onion, and parsley. Gently toss to mix the ingredients evenly.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.
- Pour the dressing over the rice mixture and toss gently to coat all the ingredients.
- Arrange the quartered hard-boiled eggs on top of the salad for garnish.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
- For added crunch, consider mixing in some diced bell peppers or cucumber.
