  • 2 large leeks, cleaned and sliced (white and light green parts only)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • 1 cup reduced-fat cream cheese, softened
  • 1 cup shredded low-fat Swiss cheese
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Whole grain bread or vegetable sticks for dipping

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and sauté for about 5 minutes until they are soft and translucent.
  2. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  3. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 5 minutes.
  4. Reduce the heat to low and stir in the softened cream cheese until fully melted and combined.
  5. Gradually add the shredded Swiss cheese, stirring constantly until melted and smooth.
  6. Mix in the Dijon mustard, black pepper, and nutmeg. Stir until everything is well combined and heated through.
  7. Transfer the fondue to a serving dish or keep it warm in the skillet. Garnish with fresh parsley.
  8. Serve with whole grain bread or vegetable sticks for dipping.
