- 2 large leeks, cleaned and sliced (white and light green parts only)
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup low-sodium vegetable broth
- 1 cup reduced-fat cream cheese, softened
- 1 cup shredded low-fat Swiss cheese
- 1 teaspoon Dijon mustard
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 tablespoon fresh parsley, chopped (for garnish)
- Whole grain bread or vegetable sticks for dipping
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and sauté for about 5 minutes until they are soft and translucent.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
- Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 5 minutes.
- Reduce the heat to low and stir in the softened cream cheese until fully melted and combined.
- Gradually add the shredded Swiss cheese, stirring constantly until melted and smooth.
- Mix in the Dijon mustard, black pepper, and nutmeg. Stir until everything is well combined and heated through.
- Transfer the fondue to a serving dish or keep it warm in the skillet. Garnish with fresh parsley.
- Serve with whole grain bread or vegetable sticks for dipping.
Notes
- For a lighter version, substitute the cream cheese with Greek yogurt.
- Add cooked, diced chicken or shrimp for a protein boost and heartier meal.
