- 2 cups cooked cauliflower rice
- 1 pound boneless, skinless chicken thighs, diced
- 8 ounces mushrooms, sliced
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add the diced chicken thighs and season with salt, pepper, garlic powder, onion powder, and thyme. Cook until the chicken is browned and cooked through, about 7-10 minutes.
- Add the sliced mushrooms to the skillet and cook for an additional 5 minutes, until they are tender.
- In a large mixing bowl, combine the cooked cauliflower rice, heavy cream, chicken broth, cheddar cheese, and Parmesan cheese. Mix well.
- Add the cooked chicken and mushrooms to the bowl and stir until everything is well combined.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and golden on top.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.

- For added flavor, you can sauté some spinach or kale with the mushrooms before adding them to the casserole.
