- 1 medium onion, chopped

- 1 teaspoon grated fresh ginger
- 1 bunch collard greens or kale, chopped (about 8 cups)
- 1 cup vegetable broth or water
- 1/2 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the chopped collard greens or kale to the skillet, stirring to combine. Cook for about 5 minutes until the greens begin to wilt.
- Pour in the vegetable broth or water, cover the skillet, and let it simmer for 10 minutes until the greens are tender.
- In a separate bowl, whisk together the peanut butter, soy sauce, and lemon juice until smooth.
- Remove the lid from the skillet and stir in the peanut butter mixture. Cook for another 5 minutes, stirring frequently, until everything is well combined and heated through.
- Season with salt and pepper to taste before serving.
Notes
- For added texture, consider mixing in some chopped roasted peanuts before serving.
- You can substitute the collard greens or kale with spinach or Swiss chard for a different flavor profile.
