Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 bunch collard greens or kale, chopped (about 8 cups)
  • 1 cup vegetable broth or water
  • 1/2 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the chopped collard greens or kale to the skillet, stirring to combine. Cook for about 5 minutes until the greens begin to wilt.
  4. Pour in the vegetable broth or water, cover the skillet, and let it simmer for 10 minutes until the greens are tender.
  5. In a separate bowl, whisk together the peanut butter, soy sauce, and lemon juice until smooth.
  6. Remove the lid from the skillet and stir in the peanut butter mixture. Cook for another 5 minutes, stirring frequently, until everything is well combined and heated through.
  7. Season with salt and pepper to taste before serving.

  • For added texture, consider mixing in some chopped roasted peanuts before serving.
