- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon Earl Grey tea leaves (or 2 tea bags)
- 1 cup mulberries (fresh or frozen)
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs and melted butter. Mix until well combined and press the mixture into the bottom of the prepared springform pan to form the crust.
- In a small saucepan, heat ½ cup of cream until just simmering. Remove from heat and add the Earl Grey tea leaves. Let steep for 10 minutes, then strain to remove the leaves and set aside to cool.
- In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Then add the vanilla extract and the cooled Earl Grey-infused cream. Mix until fully combined.
- In a separate bowl, toss the mulberries with lemon juice and cornstarch. Gently fold the mulberries into the cheesecake batter.
- Pour the cheesecake batter over the crust in the springform pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
Notes
- For a more intense Earl Grey flavor, increase the amount of tea leaves to 2 tablespoons.
- Substitute mulberries with other berries like blueberries or raspberries for a different flavor profile.
