- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili flakes (to taste)
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 can (15 ounces) crushed tomatoes
- 1 can (15 ounces) pumpkin puree
- 1 can (14 ounces) coconut milk
- 2 cups vegetable stock
- 1 cup diced sweet potatoes
- 1 cup zucchini, chopped
- Salt and pepper to taste
- Chopped parsley or mint, for garnish
Instructions
- In a large saucepan, melt the coconut oil over medium heat. Add the chopped onion and sauté until it becomes soft and golden, approximately 6-7 minutes.
- Incorporate the minced garlic and chopped ginger, stirring for another 2-3 minutes until the aroma fills the kitchen.
- Toss in the cumin seeds, coriander powder, cinnamon, turmeric, and red chili flakes. Cook for about 1 minute, allowing the spices to release their flavors.
- Mix in the chickpeas, crushed tomatoes, pumpkin puree, coconut milk, vegetable stock, sweet potatoes, and zucchini. Stir everything together until well combined.
- Increase the heat to bring the mixture to a gentle boil, then lower the heat and cover the pot. Let it simmer for 30-35 minutes, stirring occasionally, until the sweet potatoes are tender.
- Adjust the seasoning with salt and pepper as needed. Serve warm, topped with fresh parsley or mint for a burst of color and flavor.
