  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili flakes (to taste)
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (15 ounces) crushed tomatoes
  • 1 can (15 ounces) pumpkin puree
  • 1 can (14 ounces) coconut milk
  • 2 cups vegetable stock
  • 1 cup diced sweet potatoes
  • 1 cup zucchini, chopped
  • Salt and pepper to taste
  • Chopped parsley or mint, for garnish

Instructions

  1. In a large saucepan, melt the coconut oil over medium heat. Add the chopped onion and sauté until it becomes soft and golden, approximately 6-7 minutes.
  2. Incorporate the minced garlic and chopped ginger, stirring for another 2-3 minutes until the aroma fills the kitchen.
  3. Toss in the cumin seeds, coriander powder, cinnamon, turmeric, and red chili flakes. Cook for about 1 minute, allowing the spices to release their flavors.
  4. Mix in the chickpeas, crushed tomatoes, pumpkin puree, coconut milk, vegetable stock, sweet potatoes, and zucchini. Stir everything together until well combined.
  5. Increase the heat to bring the mixture to a gentle boil, then lower the heat and cover the pot. Let it simmer for 30-35 minutes, stirring occasionally, until the sweet potatoes are tender.
  6. Adjust the seasoning with salt and pepper as needed. Serve warm, topped with fresh parsley or mint for a burst of color and flavor.
