Description

A delightful Moroccan Spiced Chickpea & Cauliflower Tagine that combines rich spices with hearty vegetables and legumes.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 medium head cauliflower, cut into florets
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1/2 cup dried apricots, chopped
  • 1/2 cup raisins
  • Salt and pepper to taste
  • Fresh cilantro or parsley, for garnish

Instructions

  1. In a large pot or tagine, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, cumin, coriander, smoked paprika, cinnamon, and cayenne pepper. Cook for another 1-2 minutes until fragrant.
  3. Add the cauliflower florets, chickpeas, diced tomatoes (with their juice), vegetable broth, chopped apricots, and raisins. Stir to combine.
  4. Season with salt and pepper to taste. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for about 25-30 minutes, or until the cauliflower is tender.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro or parsley.

Notes

  • For added protein, consider adding cooked quinoa or couscous as a base for serving.
  • Feel free to substitute the dried apricots and raisins with other dried fruits like figs or cranberries for a different flavor profile.
