A delightful Moroccan Spiced Chickpea & Cauliflower Tagine that combines rich spices with hearty vegetables and legumes.
Ingredients

- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 medium head cauliflower, cut into florets
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup vegetable broth
- 1/2 cup dried apricots, chopped
- 1/2 cup raisins
- Salt and pepper to taste
- Fresh cilantro or parsley, for garnish
Instructions
- In a large pot or tagine, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, cumin, coriander, smoked paprika, cinnamon, and cayenne pepper. Cook for another 1-2 minutes until fragrant.
- Add the cauliflower florets, chickpeas, diced tomatoes (with their juice), vegetable broth, chopped apricots, and raisins. Stir to combine.
- Season with salt and pepper to taste. Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for about 25-30 minutes, or until the cauliflower is tender.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro or parsley.
Notes
- For added protein, consider adding cooked quinoa or couscous as a base for serving.
- Feel free to substitute the dried apricots and raisins with other dried fruits like figs or cranberries for a different flavor profile.
