Ingredients

  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1 tablespoon rosewater
  • 1/4 cup sliced almonds, toasted
  • 1/4 cup raisins
  • 1 tablespoon unsalted butter
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Heat the whole milk in a medium saucepan over medium heat.
  2. Stir in the sugar, sea salt, ground cinnamon, and ground cardamom, allowing the mixture to come to a gentle simmer while stirring until the sugar is fully dissolved.
  3. Once simmering, take the saucepan off the heat and add the couscous, stirring briefly to combine.
  4. Cover the pot and let it sit for about 5 minutes, allowing the couscous to soak up the milk.
  5. After the resting period, use a fork to fluff the couscous.
  6. Mix in the rosewater, toasted almonds, raisins, and butter until everything is evenly distributed.
  7. Spoon the couscous mixture into individual bowls or a larger serving dish.
  8. Let it cool to room temperature before placing it in the refrigerator for at least an hour to chill.
  9. When ready to serve, enjoy it cold or at room temperature, and if you like, top with fresh mint leaves for a refreshing touch.
