Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup chocolate chips
  • 1 cup candy eyeballs
  • 1/2 cup white chocolate chips (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin or line it with mini muffin liners.
  2. In a large mixing bowl, combine the cocoa powder, granulated sugar, brown sugar, melted butter, and vanilla extract. Mix until smooth.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the chocolate chips.
  6. Spoon the brownie batter into the prepared mini muffin tin, filling each cup about 2/3 full.
  7. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Remove from the oven and let cool for a few minutes before transferring to a wire rack to cool completely.
  9. Once cooled, place a candy eyeball on top of each brownie bite.
  10. Melt the white chocolate chips in the microwave in 30-second intervals, stirring until smooth. Drizzle the melted white chocolate over the brownie bites for a spooky effect.

Notes

  • For a fun twist, try adding a few drops of food coloring to the brownie batter for a colorful surprise inside.
