Deliciously rich and tangy molten cakes filled with yuzu curd that create a delightful explosion of flavor.


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup dark chocolate, chopped
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup all-purpose flour
  • 1/4 cup yuzu curd
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 425°F (220°C) and grease four ramekins.
  2. Melt the butter and dark chocolate together in a double boiler, stirring until smooth.
  3. In a separate bowl, whisk together the sugar, eggs, and egg yolks until pale and fluffy.
  4. Fold the melted chocolate mixture into the egg mixture.
  5. Gently fold in the flour until just combined.
  6. Pour half of the batter into the prepared ramekins.
  7. Add a spoonful of yuzu curd into the center of each ramekin.
  8. Top with the remaining batter to cover the curd.
  9. Bake for 12-14 minutes until the edges are firm but the center is soft.
  10. Let cool for 1 minute, then invert onto plates and dust with powdered sugar.

  • Yuzu curd can be made ahead of time and stored in the refrigerator.
