- 2 medium eggplants, cut into 1-inch cubes
- 1/4 cup white miso paste
- 2 tablespoons honey
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- Skewers (soaked in water if wooden)
Instructions
- In a bowl, whisk together the miso paste, honey, soy sauce, sesame oil, rice vinegar, and grated ginger until smooth.
- Add the eggplant cubes to the bowl and toss to coat them evenly with the marinade.
- Let the eggplant marinate for at least 30 minutes to absorb the flavors.
- Preheat the grill to medium-high heat.
- Thread the marinated eggplant onto skewers.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the eggplant is tender and slightly charred.
- Remove from the grill and serve warm.
Notes
