Ingredients

  • 1/4 cup white miso paste
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • Skewers (soaked in water if wooden)

Instructions

  1. In a bowl, whisk together the miso paste, honey, soy sauce, sesame oil, rice vinegar, and grated ginger until smooth.
  2. Add the eggplant cubes to the bowl and toss to coat them evenly with the marinade.
  3. Let the eggplant marinate for at least 30 minutes to absorb the flavors.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated eggplant onto skewers.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the eggplant is tender and slightly charred.
