Ingredients

  • 3 tablespoons white miso paste
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 4 cups mixed summer greens (such as arugula, spinach, and kale)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together the miso paste, honey, soy sauce, rice vinegar, and sesame oil until smooth.
  3. Place the salmon fillets on a baking sheet lined with parchment paper.
  4. Brush the miso glaze generously over the salmon fillets.
  5. Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through and flaky.
  6. While the salmon is baking, heat olive oil in a large skillet over medium heat.
  7. Add the mixed summer greens to the skillet and sauté for 2-3 minutes until wilted. Season with salt and pepper.
  8. Serve the miso-glazed salmon on a bed of sautéed summer greens.
