A delicious and healthy dish featuring salmon glazed with miso and served with fresh summer greens.
Ingredients

- 4 salmon fillets
- 3 tablespoons white miso paste
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons sesame oil
- 4 cups mixed summer greens (such as arugula, spinach, and kale)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together the miso paste, honey, soy sauce, rice vinegar, and sesame oil until smooth.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Brush the miso glaze generously over the salmon fillets.
- Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through and flaky.
- While the salmon is baking, heat olive oil in a large skillet over medium heat.
- Add the mixed summer greens to the skillet and sauté for 2-3 minutes until wilted. Season with salt and pepper.
- Serve the miso-glazed salmon on a bed of sautéed summer greens.
Notes
- For a spicier kick, add a teaspoon of sriracha to the miso glaze.
- Feel free to substitute the salmon with another fish like trout or cod.
- This dish pairs well with steamed rice or quinoa.
