- 2 pounds carrots, peeled and cut into sticks
- 4 tablespoons unsalted butter, melted
- 2 tablespoons white miso paste
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the melted butter, miso paste, honey, olive oil, garlic powder, salt, and black pepper until well combined.
- Add the carrot sticks to the bowl and toss until they are evenly coated with the miso butter mixture.
- Spread the carrots in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.
- Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
