Description

A delightful dish featuring grilled apricots brushed with miso-butter and served with a creamy whipped tofu.


Ingredients

  • 4 ripe apricots, halved and pitted
  • 2 tablespoons miso paste
  • 2 tablespoons unsalted butter, melted
  • 1 block (14 oz) firm tofu, drained
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the grill to medium heat.
  2. In a small bowl, mix together the miso paste and melted butter until smooth.
  3. Brush the cut sides of the apricots with the miso-butter mixture.
  4. Place the apricots cut-side down on the grill and cook for about 4-5 minutes, until grill marks appear.
  5. While the apricots are grilling, blend the tofu, maple syrup, vanilla extract, and salt in a food processor until creamy.
  6. Remove the apricots from the grill and serve warm with a dollop of whipped tofu on top.

Notes

  • For a vegan version, substitute the butter with a plant-based alternative.
  • Adjust the sweetness of the whipped tofu by adding more or less maple syrup to taste.
