A delightful dish featuring grilled apricots brushed with miso-butter and served with a creamy whipped tofu.

- 4 ripe apricots, halved and pitted
- 2 tablespoons miso paste
- 2 tablespoons unsalted butter, melted
- 1 block (14 oz) firm tofu, drained
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the grill to medium heat.
- In a small bowl, mix together the miso paste and melted butter until smooth.
- Brush the cut sides of the apricots with the miso-butter mixture.
- Place the apricots cut-side down on the grill and cook for about 4-5 minutes, until grill marks appear.
- While the apricots are grilling, blend the tofu, maple syrup, vanilla extract, and salt in a food processor until creamy.
- Remove the apricots from the grill and serve warm with a dollop of whipped tofu on top.
Notes
- For a vegan version, substitute the butter with a plant-based alternative.
- Adjust the sweetness of the whipped tofu by adding more or less maple syrup to taste.
