- 1 cup unsweetened almond milk
- 1/4 cup chia seeds
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons maple syrup (or honey)
- 1/2 teaspoon pure peppermint extract
- 1/4 teaspoon vanilla extract
- Pinch of salt
- Fresh mint leaves (for garnish)
- Dark chocolate shavings (for garnish)
Instructions
- In a medium bowl, whisk together the almond milk, cocoa powder, maple syrup, peppermint extract, vanilla extract, and salt until well combined.
- Stir in the chia seeds, making sure they are evenly distributed throughout the mixture.
- Cover the bowl with plastic wrap or transfer the mixture to a jar with a lid. Refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken.
- Once the pudding has set, give it a good stir. If it’s too thick, you can add a little more almond milk to reach your desired consistency.
- Serve the pudding in individual bowls or jars, garnished with fresh mint leaves and dark chocolate shavings.
Notes
- For a richer chocolate flavor, increase the cocoa powder to 3 tablespoons.
- Substitute the almond milk with coconut milk for a creamier texture and a hint of tropical flavor.
