Ingredients

  • 1/4 cup chia seeds
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons maple syrup (or honey)
  • 1/2 teaspoon pure peppermint extract
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Fresh mint leaves (for garnish)
  • Dark chocolate shavings (for garnish)

Instructions

  1. In a medium bowl, whisk together the almond milk, cocoa powder, maple syrup, peppermint extract, vanilla extract, and salt until well combined.
  2. Stir in the chia seeds, making sure they are evenly distributed throughout the mixture.
  3. Cover the bowl with plastic wrap or transfer the mixture to a jar with a lid. Refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken.
  4. Once the pudding has set, give it a good stir. If it’s too thick, you can add a little more almond milk to reach your desired consistency.
  5. Serve the pudding in individual bowls or jars, garnished with fresh mint leaves and dark chocolate shavings.
