Miniature Almond Tarts are delightful bite-sized desserts made with a buttery crust and a rich almond filling, perfect for any occasion.
Ingredients

- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
- 1 cup almond meal (ground almonds)
- 1/2 cup granulated sugar
- 2 large eggs
- 1/4 teaspoon almond extract
- 1/4 cup sliced almonds (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin with cooking spray or butter.
- In a mixing bowl, combine the flour, powdered sugar, softened butter, and salt. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
- Add the egg yolk and vanilla extract to the flour mixture. Mix until a dough forms.
- Press a small amount of dough into the bottom and up the sides of each muffin cup to form a crust. Bake in the preheated oven for 10-12 minutes, or until lightly golden. Remove from the oven and let cool slightly.
- In a separate bowl, whisk together the almond meal, granulated sugar, eggs, and almond extract until smooth.
- Pour the almond filling into each tart shell, filling them about 3/4 full.
- Top each tart with a few sliced almonds.
- Bake for an additional 15-18 minutes, or until the filling is set and lightly golden.
- Allow the tarts to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
Notes
- For a chocolate twist, add 2 tablespoons of cocoa powder to the almond filling.
- Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
