Mini Rolo Cheesecakes that are Irresistibly Delicious!
Ingredients

- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1 large egg
- 12 mini Rolo candies, chopped
- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1/4 cup powdered sugar
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 325°F. Line a muffin tin with paper liners.
- In a medium bowl, combine graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Press about 1 tablespoon of the mixture into the bottom of each muffin liner to form a crust.
- In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy. Add the egg and mix until just combined. Gently fold in the chopped Rolo candies.
- Divide the cheesecake mixture evenly among the muffin liners, filling each about 3/4 full. Bake for 18-20 minutes, or until the centers are set but still slightly jiggly.
- Remove from the oven and let cool at room temperature for 10 minutes, then refrigerate for at least 2 hours to set.
- While the cheesecakes are chilling, whip the heavy cream with powdered sugar until soft peaks form. Once the cheesecakes are fully chilled, top each with a dollop of whipped cream.
Notes
- For a chocolate twist, add 2 tablespoons of cocoa powder to the cheesecake mixture.
- For a salted caramel flavor, drizzle caramel sauce over the top before serving and sprinkle with a pinch of sea salt.
