Mini pineapple upside-down cheesecakes are a must-try!


Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 2 tbsp melted butter
  • 16 oz cream cheese, softened
  • ½ cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • ½ cup crushed pineapple, drained
  • 6 pineapple rings
  • 6 maraschino cherries
  • 2 tbsp brown sugar

Instructions

  1. Preheat oven to 325°F (160°C). Line a muffin tin with liners.
  2. Mix crust ingredients and press into liners.
  3. Beat cream cheese, sugar, eggs, and vanilla. Fold in pineapple. Pour over crusts.
  4. Top each with a pineapple ring, cherry, and sprinkle of brown sugar.
  5. Bake 20-25 minutes. Chill 2 hours before serving.
