Ingredients

- 1 cup graham cracker crumbs
- 2 tbsp melted butter
- 16 oz cream cheese, softened
- ½ cup sugar
- 2 eggs
- 1 tsp vanilla
- ½ cup crushed pineapple, drained
- 6 pineapple rings
- 6 maraschino cherries
- 2 tbsp brown sugar
Instructions
- Preheat oven to 325°F (160°C). Line a muffin tin with liners.
- Mix crust ingredients and press into liners.
- Beat cream cheese, sugar, eggs, and vanilla. Fold in pineapple. Pour over crusts.
- Top each with a pineapple ring, cherry, and sprinkle of brown sugar.
- Bake 20-25 minutes. Chill 2 hours before serving.
