Description
Mini Peach Crumble Pies are delightful individual desserts filled with sweet peaches and topped with a crunchy crumble.
Ingredients

- 2 cups fresh peaches, peeled and diced
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1 tablespoon cornstarch
- 1 pre-made pie crust
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/4 cup all-purpose flour
- 1/4 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the diced peaches, granulated sugar, lemon juice, cinnamon, and cornstarch. Mix well.
- Roll out the pie crust and cut it into small circles to fit into a muffin tin.
- Place the pie crust circles into the muffin tin and fill each with the peach mixture.
- In another bowl, mix the oats, brown sugar, flour, and melted butter to create the crumble topping.
- Sprinkle the crumble mixture over the peach filling in each pie.
- Bake in the preheated oven for 25-30 minutes or until the crumble is golden brown.
- Allow to cool slightly before serving.
Notes
- Serve warm with a scoop of vanilla ice cream for an extra treat.
- Can substitute fresh peaches with canned peaches if necessary.
- Adjust the sugar based on the sweetness of the peaches.
