Ingredients

  • 1 cup sweet rice flour (mochi flour)
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk (dairy or non-dairy)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter or coconut oil
  • Cooking spray or oil for greasing the pan
  • For the glaze:
  • 1 cup powdered sugar
  • 2 tablespoons milk (dairy or non-dairy)
  • 1/2 teaspoon vanilla extract
  • Sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a mini donut pan with cooking spray or oil.
  2. In a mixing bowl, combine the sweet rice flour, granulated sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, egg, vanilla extract, and melted butter until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until smooth and fully incorporated.
  5. Spoon the batter into the prepared mini donut pan, filling each cavity about 3/4 full.
  6. Bake for 10-12 minutes or until the donuts are lightly golden and a toothpick inserted comes out clean.
  7. Allow the donuts to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  8. While the donuts are cooling, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
  9. Dip the cooled donuts into the glaze, allowing any excess to drip off, and sprinkle with optional sprinkles if desired.
  10. Let the glaze set for a few minutes before serving.

Notes

  • For a chocolate version, substitute 2 tablespoons of the sweet rice flour with cocoa powder.
