Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 23 tablespoons cold water
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • Zest of 2 lemons
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup heavy cream
  • 3 large egg whites
  • 1/2 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • Lilac food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, powdered sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in the egg yolk and cold water, mixing until a dough forms. Press the dough into mini tart pans and prick the bottoms with a fork.
  4. Bake for 15-20 minutes, or until lightly golden. Let cool.
  5. In a mixing bowl, whisk together lemon juice, lemon zest, sugar, eggs, and cream until smooth.
  6. Pour the mixture into the cooled tart crusts. Bake for 20-25 minutes, or until the filling is set. Let cool.
  7. In a clean bowl, beat the egg whites with an electric mixer until foamy. Add cream of tartar and gradually add sugar, beating until stiff peaks form.
  8. If desired, add lilac food coloring and gently mix to achieve the desired color.
  9. Once the lemon tarts are cool, pipe or spread the lilac meringue on top.
  10. Use a kitchen torch to lightly toast the meringue, or place under a broiler for a few seconds until golden (watch closely!).
  11. Allow the tarts to cool completely before serving. Enjoy the refreshing flavors!
