These delightful mini lemon tarts are topped with a beautiful lilac meringue, making them a perfect dessert for any occasion.

- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1 egg yolk
- 2–3 tablespoons cold water
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- Zest of 2 lemons
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 cup heavy cream
- 3 large egg whites
- 1/2 cup granulated sugar
- 1/4 teaspoon cream of tartar
- Lilac food coloring (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine flour, powdered sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Stir in the egg yolk and cold water, mixing until a dough forms. Press the dough into mini tart pans and prick the bottoms with a fork.
- Bake for 15-20 minutes, or until lightly golden. Let cool.
- In a mixing bowl, whisk together lemon juice, lemon zest, sugar, eggs, and cream until smooth.
- Pour the mixture into the cooled tart crusts. Bake for 20-25 minutes, or until the filling is set. Let cool.
- In a clean bowl, beat the egg whites with an electric mixer until foamy. Add cream of tartar and gradually add sugar, beating until stiff peaks form.
- If desired, add lilac food coloring and gently mix to achieve the desired color.
- Once the lemon tarts are cool, pipe or spread the lilac meringue on top.
- Use a kitchen torch to lightly toast the meringue, or place under a broiler for a few seconds until golden (watch closely!).
- Allow the tarts to cool completely before serving. Enjoy the refreshing flavors!

- Ensure the tart crust is completely cool before adding the lemon filling to prevent it from becoming soggy.
- Watch the meringue closely if using a broiler to avoid burning.
- Lilac food coloring is optional and can be adjusted to your preference.
