Instructions
- Preheat your oven to 350°F (175°C) and prepare a mini cake pan by greasing it or lining it with parchment paper.
- In a mixing bowl, combine the almond flour, cocoa powder, baking powder, baking soda, salt, and erythritol, whisking until evenly blended.
- In a separate bowl, beat together the egg, creamy peanut butter, almond milk, and vanilla extract until smooth and well combined.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just incorporated. If desired, fold in the sugar-free chocolate chips.
- Transfer the batter into the prepared mini cake pan, leveling the surface with a spatula.
- Bake in the preheated oven for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before moving it to a wire rack to cool completely.
