Description

Mini Cherry Tomato and Basil Tarts are a delightful appetizer that combines fresh ingredients in a flaky pastry shell.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, chilled and cubed
  • 2 to 3 tablespoons cold water
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together.
  3. Roll out the dough on a lightly floured surface to about 1/8 inch thick. Cut out circles using a 3-inch round cutter and place them into a greased muffin tin, pressing gently to form tart shells.
  4. In a separate bowl, combine the ricotta cheese, mozzarella cheese, chopped basil, black pepper, and garlic powder. Mix well.
  5. Spoon the cheese mixture into each tart shell, filling them about 2/3 full. Top each tart with halved cherry tomatoes, cut side up.
  6. Brush the edges of the tart shells with the beaten egg for a golden finish.
  7. Bake in the preheated oven for 20-25 minutes, or until the tarts are golden brown and the cheese is bubbly.
  8. Allow to cool for a few minutes before removing from the muffin tin. Serve warm or at room temperature.

Notes

  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend.
  • Add a sprinkle of grated Parmesan cheese on top before baking for an extra layer of flavor.
