Delicious mini tarts filled with caramel and pecans, perfect for dessert lovers.
Ingredients

- 1 cup all-purpose flour
- 1/4 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 2 tablespoons cold water
- 1 cup pecans, chopped
- 1 cup brown sugar, packed
- 1/2 cup heavy cream
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F.
- In a mixing bowl, combine the flour, softened butter, granulated sugar, and salt. Mix until crumbly.
- Add the egg yolk and cold water, mixing until a dough forms.
- Divide the dough into 12 equal portions and press each portion into the bottom and up the sides of a mini muffin tin. Prick the bottoms with a fork to prevent bubbling.
- Bake the crusts for 10-12 minutes or until lightly golden. Remove from the oven and let cool slightly.
- In a saucepan over medium heat, combine the brown sugar, heavy cream, butter, vanilla extract, and salt. Stir until the mixture is smooth and begins to bubble.
- Remove from heat and stir in the chopped pecans.
- Spoon the caramel pecan mixture into each baked tart shell, filling them about 3/4 full.
- Return the tarts to the oven and bake for an additional 10 minutes.
- Allow the tarts to cool completely in the pan before carefully removing them.
Notes
- For a chocolate twist, drizzle melted chocolate over the cooled tarts.
- You can substitute walnuts for pecans for a different flavor.
