- 1 cup crushed graham crackers
- 1/2 cup melted unsalted butter
- 1/4 cup white sugar
- 2 packages (8 ounces each) softened cream cheese
- 1/2 cup confectioners’ sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup finely chopped walnuts
- 1/2 cup honey
- 1/4 cup water
- 1 tablespoon fresh lemon juice
Instructions
- Preheat your oven to 325°F and prepare a muffin tin with paper liners.
- In a bowl, mix the crushed graham crackers, melted butter, and white sugar until the mixture resembles wet sand.
- Press about a tablespoon of this mixture into the bottom of each muffin liner to create a base.
- Bake for 10 minutes, then set aside to cool.
- In a separate large bowl, whip the softened cream cheese until smooth using an electric mixer.
- Gradually add in the confectioners’ sugar, vanilla extract, eggs, cinnamon, and nutmeg, mixing until well incorporated and creamy.
- Gently fold in the chopped walnuts.
- Spoon the cheesecake mixture into the muffin liners over the cooled crusts, filling each one about three-quarters full.
- Bake for 20 to 25 minutes, or until the centers are firm yet still slightly wobbly.
- Allow them to cool at room temperature.
- For the topping, combine honey, water, and lemon juice in a small saucepan and heat over medium until it simmers.
- Let it cook for about 5 minutes until it thickens slightly.
- Once the cheesecakes have cooled, drizzle the honey mixture generously over the tops.
- Chill in the refrigerator for at least 2 hours before serving to enhance the flavors.
