Ingredients

  • 1 cup crushed graham crackers
  • 1/2 cup melted unsalted butter
  • 1/4 cup white sugar
  • 2 packages (8 ounces each) softened cream cheese
  • 1/2 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup finely chopped walnuts
  • 1/2 cup honey
  • 1/4 cup water
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 325°F and prepare a muffin tin with paper liners.
  2. In a bowl, mix the crushed graham crackers, melted butter, and white sugar until the mixture resembles wet sand.
  3. Press about a tablespoon of this mixture into the bottom of each muffin liner to create a base.
  4. Bake for 10 minutes, then set aside to cool.
  5. In a separate large bowl, whip the softened cream cheese until smooth using an electric mixer.
  6. Gradually add in the confectioners’ sugar, vanilla extract, eggs, cinnamon, and nutmeg, mixing until well incorporated and creamy.
  7. Gently fold in the chopped walnuts.
  8. Spoon the cheesecake mixture into the muffin liners over the cooled crusts, filling each one about three-quarters full.
  9. Bake for 20 to 25 minutes, or until the centers are firm yet still slightly wobbly.
  10. Allow them to cool at room temperature.
  11. For the topping, combine honey, water, and lemon juice in a small saucepan and heat over medium until it simmers.
  12. Let it cook for about 5 minutes until it thickens slightly.
  13. Once the cheesecakes have cooled, drizzle the honey mixture generously over the tops.
  14. Chill in the refrigerator for at least 2 hours before serving to enhance the flavors.
