Description

Ingredients

  • 12 small Yukon Gold potatoes (about 12 inches in diameter)
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup cooked and crumbled bacon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the mini potatoes thoroughly and pat them dry with a towel.
  3. In a large bowl, toss the potatoes with olive oil, sea salt, and black pepper until evenly coated.
  4. Arrange the potatoes in a single layer on a baking sheet.
  5. Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender when pierced with a fork.
  6. Remove the potatoes from the oven and let them cool for about 5 minutes.
  7. Cut a small slit in the top of each potato and gently squeeze the sides to open them slightly.
  8. Top each potato with a dollop of sour cream, a sprinkle of cheddar cheese, green onions, and bacon if using.
