- 12 small Yukon Gold potatoes (about 1–2 inches in diameter)
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- 1/4 cup cooked and crumbled bacon (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the mini potatoes thoroughly and pat them dry with a towel.
- In a large bowl, toss the potatoes with olive oil, sea salt, and black pepper until evenly coated.
- Arrange the potatoes in a single layer on a baking sheet.
- Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender when pierced with a fork.
- Remove the potatoes from the oven and let them cool for about 5 minutes.
- Cut a small slit in the top of each potato and gently squeeze the sides to open them slightly.
- Top each potato with a dollop of sour cream, a sprinkle of cheddar cheese, green onions, and bacon if using.
Notes
- For a spicy kick, add a pinch of cayenne pepper to the olive oil mixture before tossing the potatoes.
- Try different toppings such as guacamole, salsa, or ranch dressing for a fun twist.
