Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 medium zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup small pasta (like ditalini or elbow)
  • 2 cups fresh spinach or kale, chopped
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the diced carrots, celery, zucchini, and green beans to the pot. Cook for about 5-7 minutes, stirring occasionally, until the vegetables start to soften.
  4. Pour in the diced tomatoes and vegetable broth. Add the cannellini beans, oregano, basil, salt, and pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to a simmer and add the pasta. Cook according to the pasta package instructions, usually about 8-10 minutes, until al dente.
  6. Stir in the chopped spinach or kale and cook for an additional 2-3 minutes until wilted.
  7. Taste and adjust seasoning if necessary. Serve hot, topped with grated Parmesan cheese if desired.
