- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup sweetened condensed milk
- 1 cup semi-sweet chocolate chips
- 1 tablespoon unsalted butter (for chocolate topping)
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Gradually add the flour and salt to the butter mixture, mixing until just combined. The dough will be crumbly.
- Press the dough evenly into the bottom of the prepared baking pan. Bake in the preheated oven for 20-25 minutes, or until lightly golden. Remove from the oven and let cool completely.
- In a saucepan over medium heat, combine the sweetened condensed milk and 1/2 cup of chocolate chips. Stir continuously until the chocolate is melted and the mixture is smooth. Pour this caramel-like mixture over the cooled shortbread base, spreading it evenly.
- In a microwave-safe bowl, combine the remaining chocolate chips and 1 tablespoon of butter. Microwave in 30-second intervals, stirring in between, until melted and smooth. Pour the chocolate over the caramel layer and spread evenly.
- Refrigerate the shortbread for at least 2 hours or until the chocolate is set. Once set, cut into squares or bars and serve.
Notes
- For a twist, try adding a sprinkle of sea salt on top of the chocolate layer before it sets for a salted caramel flavor.
- You can substitute the semi-sweet chocolate with milk chocolate for a sweeter taste.
