Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup sweetened condensed milk
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon unsalted butter (for chocolate topping)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  3. Gradually add the flour and salt to the butter mixture, mixing until just combined. The dough will be crumbly.
  4. Press the dough evenly into the bottom of the prepared baking pan. Bake in the preheated oven for 20-25 minutes, or until lightly golden. Remove from the oven and let cool completely.
  5. In a saucepan over medium heat, combine the sweetened condensed milk and 1/2 cup of chocolate chips. Stir continuously until the chocolate is melted and the mixture is smooth. Pour this caramel-like mixture over the cooled shortbread base, spreading it evenly.
  6. In a microwave-safe bowl, combine the remaining chocolate chips and 1 tablespoon of butter. Microwave in 30-second intervals, stirring in between, until melted and smooth. Pour the chocolate over the caramel layer and spread evenly.
  7. Refrigerate the shortbread for at least 2 hours or until the chocolate is set. Once set, cut into squares or bars and serve.

Notes

  • For a twist, try adding a sprinkle of sea salt on top of the chocolate layer before it sets for a salted caramel flavor.
  • You can substitute the semi-sweet chocolate with milk chocolate for a sweeter taste.
