- 2 lbs potatoes, peeled and diced
- 1 cup sour cream
- 1 cup cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 cup diced onions
- 1/2 cup melted butter
- 1 tbsp garlic powder
- Salt and pepper, to taste
- 1 cup crushed cornflakes or potato chips (for topping)
Instructions
- Preheat oven to 350°F (175°C). Boil the diced potatoes in water until tender, then drain.
- In a large bowl, combine sour cream, cream of chicken soup, cheddar cheese, onions, melted butter, garlic powder, salt, and pepper.
- Fold in the potatoes and gently stir to coat.
- Spread the mixture in a greased 9×13 inch baking dish, then top with crushed cornflakes or potato chips.
- Bake for 30-35 minutes until bubbly and golden. Let cool for a few minutes before serving.
Notes
- For a vegetarian version, use cream of mushroom soup instead of cream of chicken soup.
- Feel free to add cooked bacon bits for extra flavor.
- This dish can be prepared a day in advance and baked just before serving.
