- 1/2 cup mayonnaise
- 2 tablespoons lime juice (freshly squeezed)
- 1 teaspoon lime zest
- 1/2 cup crumbled Cotija cheese
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1 jalapeño, finely chopped (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the corn kernels and sauté for about 5-7 minutes until they are slightly charred and tender. Stir occasionally to ensure even cooking.
- While the corn is cooking, in a small bowl, mix together the mayonnaise, lime juice, lime zest, chili powder, smoked paprika, garlic powder, salt, and pepper until well combined.
- Once the corn is cooked, remove it from the heat and let it cool for a few minutes.
- In a large mixing bowl, combine the cooled corn, lime mayo mixture, Cotija cheese, cilantro, red onion, and jalapeño (if using). Stir gently until everything is well coated.
- Taste and adjust seasoning if necessary. Serve immediately or chill in the refrigerator for about 30 minutes to allow the flavors to meld.
