Description

  • 2 cups corn kernels (fresh, frozen, or canned)
  • 1 tablespoon olive oil
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 teaspoon lime zest
  • 1/2 cup crumbled Cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 1 jalapeño, finely chopped (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the corn kernels and sauté for about 5-7 minutes until they are slightly charred and tender. Stir occasionally to ensure even cooking.
  2. While the corn is cooking, in a small bowl, mix together the mayonnaise, lime juice, lime zest, chili powder, smoked paprika, garlic powder, salt, and pepper until well combined.
  3. Once the corn is cooked, remove it from the heat and let it cool for a few minutes.
  4. In a large mixing bowl, combine the cooled corn, lime mayo mixture, Cotija cheese, cilantro, red onion, and jalapeño (if using). Stir gently until everything is well coated.
  5. Taste and adjust seasoning if necessary. Serve immediately or chill in the refrigerator for about 30 minutes to allow the flavors to meld.
