Description

A creamy and flavorful dip inspired by the popular Mexican street food, elote, featuring sweet corn, spices, and cheese.


Ingredients

  • 2 cups sweet corn (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup cotija cheese, crumbled
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sweet corn, mayonnaise, and sour cream.
  2. Add the crumbled cotija cheese, chopped cilantro, lime juice, chili powder, garlic powder, salt, and pepper.
  3. Mix all the ingredients until well combined.
  4. Transfer the dip to a serving dish and garnish with additional cotija cheese and cilantro if desired.
  5. Serve with tortilla chips or fresh vegetables.

Notes

  • This dip can be served warm or cold.
  • For a spicier version, add diced jalapeños.
