Ingredients

  • 4 cups water
  • 1 cup canned pumpkin puree
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup sugar (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans (optional, for garnish)
  • Ice cubes (for serving)

Instructions

  1. Rinse the rice thoroughly under cold water until the water runs clear to eliminate excess starch.
  2. Blend the rinsed rice with 4 cups of water in a blender on high speed for about 1-2 minutes until the mixture resembles a fine slurry.
  3. Transfer the blended mixture into a large bowl or pitcher and allow it to rest at room temperature for a minimum of 3 hours, or refrigerate it overnight for a more intense flavor.
  4. Once the soaking period is complete, strain the mixture through a fine mesh sieve or cheesecloth into another bowl or pitcher, discarding the solids.
  5. In the strained liquid, mix in the pumpkin puree, milk, sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt, whisking until everything is well blended.
  6. Chill the drink in the refrigerator for at least 30 minutes to enhance its refreshing qualities.
  7. When ready to serve, pour the spiced pumpkin rice drink over ice and top with chopped pecans if desired.
