- 4 cups water
- 1 cup canned pumpkin puree
- 1 cup milk (dairy or non-dairy)
- 1/2 cup sugar (adjust to taste)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup chopped pecans (optional, for garnish)
- Ice cubes (for serving)
Instructions
- Rinse the rice thoroughly under cold water until the water runs clear to eliminate excess starch.
- Blend the rinsed rice with 4 cups of water in a blender on high speed for about 1-2 minutes until the mixture resembles a fine slurry.
- Transfer the blended mixture into a large bowl or pitcher and allow it to rest at room temperature for a minimum of 3 hours, or refrigerate it overnight for a more intense flavor.
- Once the soaking period is complete, strain the mixture through a fine mesh sieve or cheesecloth into another bowl or pitcher, discarding the solids.
- In the strained liquid, mix in the pumpkin puree, milk, sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt, whisking until everything is well blended.
- Chill the drink in the refrigerator for at least 30 minutes to enhance its refreshing qualities.
- When ready to serve, pour the spiced pumpkin rice drink over ice and top with chopped pecans if desired.
