  • 1 pound pork shoulder, diced into 1-inch pieces
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 4 cups chicken stock
  • 2 (15-ounce) cans hominy, rinsed and drained
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 1 cup sweet corn (fresh, frozen, or canned)
  • Salt and black pepper to taste
  • Chopped fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Heat the olive oil in a large Dutch oven over medium heat. Add the diced pork and sear until browned on all sides, about 6-8 minutes.
  2. Once the pork is nicely browned, add the chopped onion and minced garlic, stirring frequently until the onion softens and becomes translucent, about 4-5 minutes.
  3. Sprinkle in the cumin, oregano, and smoked paprika, stirring for about a minute to release their aromas.
  4. Pour in the chicken stock and add the hominy, fire-roasted tomatoes, and sweet corn. Mix everything together well.
  5. Increase the heat to bring the mixture to a gentle boil, then lower the heat and let it simmer uncovered for 30-40 minutes, allowing the flavors to meld and the pork to become tender.
  6. Taste and adjust seasoning with salt and black pepper as needed.
  7. Ladle the stew into bowls and top with fresh cilantro. Serve with lime wedges on the side for an extra zesty touch.
