- 1 pound pork shoulder, diced into 1-inch pieces
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- 4 cups chicken stock
- 2 (15-ounce) cans hominy, rinsed and drained
- 1 (14.5-ounce) can fire-roasted diced tomatoes
- 1 cup sweet corn (fresh, frozen, or canned)
- Salt and black pepper to taste
- Chopped fresh cilantro (for garnish)
- Lime wedges (for serving)
Instructions
- Heat the olive oil in a large Dutch oven over medium heat. Add the diced pork and sear until browned on all sides, about 6-8 minutes.
- Once the pork is nicely browned, add the chopped onion and minced garlic, stirring frequently until the onion softens and becomes translucent, about 4-5 minutes.
- Sprinkle in the cumin, oregano, and smoked paprika, stirring for about a minute to release their aromas.
- Pour in the chicken stock and add the hominy, fire-roasted tomatoes, and sweet corn. Mix everything together well.
- Increase the heat to bring the mixture to a gentle boil, then lower the heat and let it simmer uncovered for 30-40 minutes, allowing the flavors to meld and the pork to become tender.
- Taste and adjust seasoning with salt and black pepper as needed.
- Ladle the stew into bowls and top with fresh cilantro. Serve with lime wedges on the side for an extra zesty touch.

- For a spicier version, add diced jalapeños or a dash of hot sauce.
