  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 medium avocado, sliced (for garnish)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced onion and cook until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
  5. Stir in the diced zucchini, bell pepper, and tomato. Season with chili powder, cumin, paprika, salt, and pepper. Cook for another 5-7 minutes, until the vegetables are tender.
  6. Sprinkle the shredded cheddar cheese over the mixture and cover the skillet. Allow the cheese to melt, about 2-3 minutes.
  7. Remove from heat and garnish with sliced avocado and chopped cilantro before serving.
