- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium zucchini, diced
- 1 medium bell pepper, diced
- 1 medium tomato, diced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- 1 medium avocado, sliced (for garnish)
- Fresh cilantro, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and cook until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
- Stir in the diced zucchini, bell pepper, and tomato. Season with chili powder, cumin, paprika, salt, and pepper. Cook for another 5-7 minutes, until the vegetables are tender.
- Sprinkle the shredded cheddar cheese over the mixture and cover the skillet. Allow the cheese to melt, about 2-3 minutes.
- Remove from heat and garnish with sliced avocado and chopped cilantro before serving.
Notes
- For added crunch, serve with pork rinds or cucumber slices on the side.
- You can substitute ground beef with ground turkey or chicken for a lighter option.
- For extra spice, add diced jalapeños or a dash of hot sauce to the skillet while cooking.
