- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium bell pepper, diced
- 2 medium zucchini, diced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup diced tomatoes (canned or fresh)
- 1 cup shredded cheddar cheese
- 2 tablespoons olive oil
- Fresh cilantro, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 7-10 minutes. Drain excess fat if necessary.
- Stir in the chili powder, cumin, paprika, salt, and pepper. Mix well to combine.
- Add the diced zucchini and tomatoes, cooking for another 5-7 minutes until the zucchini is tender.
- Sprinkle the shredded cheddar cheese over the top and cover the skillet. Allow the cheese to melt for about 2-3 minutes.
- Remove from heat and garnish with fresh cilantro before serving.

- For added crunch, serve with pork rinds or alongside celery sticks.
- Substitute ground beef with ground turkey or chicken for a lighter option.
