  • 2 medium zucchini, diced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 7-10 minutes. Drain excess fat if necessary.
  5. Stir in the chili powder, cumin, paprika, salt, and pepper. Mix well to combine.
  6. Add the diced zucchini and tomatoes, cooking for another 5-7 minutes until the zucchini is tender.
  7. Sprinkle the shredded cheddar cheese over the top and cover the skillet. Allow the cheese to melt for about 2-3 minutes.
  8. Remove from heat and garnish with fresh cilantro before serving.
